Apples and cranberries are the two fruits that run my autumn. One shows up by the bushel in September, the other arrives in a bag in November and has to be used before Thanksgiving. They end up in the same recipes often enough that it made sense to keep them on one page.

Cranberry Sauces, Jams and Relishes
Cranberry sauce is finished the moment the berries pop and the liquid turns glossy. Keep cooking past that and the pectin breaks down, which is why some sauces end up thin.
There is a version here for every table. Classic homemade cranberry sauce is the baseline, the best-ever cranberry sauce adds a little more sweetness, and keto cranberry sauce skips the sugar. If somebody in your family likes heat, the cranberry jalapeno jam and the cowboy candy are the ones that get fought over.

Cranberries do not need to be thawed before baking. Frozen berries actually hold their shape better in a batter and are less likely to bleed streaks through a cake.

Apple Cider Recipes
Apple cider becomes a baking ingredient once you reduce it, because the raw cider is mostly water and the flavor only concentrates when that water leaves.
That reduction is what gives apple cider glazed bundt cake and apple cider caramel blondies their depth. The apple cider donut muffins are the shortcut for anyone who wants the donut without the frying, and the apple cider cinnamon rolls are a weekend project.
Buy the cloudy, unfiltered cider rather than clear apple juice. The difference shows in anything you reduce, and it is the whole reason these bakes taste like autumn instead of generic sweetness. Reduce more than you need and keep the rest for glazing.

Apple Cakes, Bundts and Blondies
Apple cakes stay moist because the fruit releases liquid as it bakes, which also means they need a little more flour than a plain butter cake to stay standing.
Invisible apple cake is the one that surprised me, mostly apple held together by barely any batter. Apple dapple cake, moist apple bundt cake and the caramel dump cake are the sturdy, feed-a-crowd end of this list.
Grated apple makes a moist crumb, diced apple makes pockets of fruit. Neither is wrong, but choose on purpose, and if you are stacking layers use diced so the cake has enough structure to hold.

Apple Breads, Muffins and Scones
An apple quick bread needs the apples diced small. Large chunks sink and leave wet pockets, which is the usual reason a loaf looks underbaked in the middle.
The zucchini and apple loaves are my favorite way to use both at once, and Amish apple fritter bread tastes like the fritter without the oil. The Wisconsin apple kringle is the ambitious one, and cinnamon apple scones are the fast one.
Quick breads are better the day after baking, once the crumb has set and the flavors have settled. Wrap the cooled loaf rather than refrigerating it, since cold dries out a loaf faster than the counter does.

Apple Breakfast Recipes
Apples at breakfast work best grated rather than chopped, so they melt into the batter or the oats instead of sitting in it.

Fried apple recipes need a firm variety. A soft apple collapses into sauce inside the batter, and you lose the contrast that makes a fritter worth making.
Air fryer apple fritters keep most of the texture with far less oil, slow cooker fried apples are the Cracker Barrel-style side, and miso caramel skillet apples are the strangest and best thing in this group.
Fry in small batches and let the oil come back up to temperature between them, or the second batch comes out greasy. If you are using the air fryer instead, give the pieces space and expect a slightly chewier result.

Which apples are best for baking?
Firm, tart varieties hold their shape: Granny Smith, Honeycrisp, Braeburn. I usually mix a tart apple with a sweeter one so the filling has some range instead of being flat sweet. Soft apples turn to sauce, which is fine in a bread and wrong in a pie.
Do I have to peel apples for a crisp or pie?
You do not have to, but I do for anything with a soft filling. Skins stay chewy while the flesh goes tender, and that contrast reads as undercooked to most people. In a grated apple bread the skin disappears and you can leave it.
Can I use frozen cranberries?
Yes, and you do not need to thaw them. Frozen berries hold their shape in a batter and bleed less. For a sauce it makes no difference at all.
Why is my crisp topping soggy?
Usually too much moisture from the fruit, or the dish was covered while still warm so it steamed itself. Let it cool uncovered, and add a little extra flour to a very juicy filling.
