Baked Brie and Puff Pastry Appetizers
Baked brie works because the rind holds the melted cheese in place. Leave the rind on, warm it until it gives under a spoon, and serve it while it still slumps.
Baked brie in puff pastry with honey and walnuts is my pick if you only make one thing from this page. Cold butter and cold pastry, every time.

Dips and Spreads
A dip needs to be thick enough to cling to whatever you are dipping. If it slides off the chip, it needs more of the solid part, not more seasoning.
Five-minute cheesy bacon ranch dip is the one I make when people are already at the door, charred scallion white bean dip is the one that surprises people, and fried pickle dip has a following I did not expect.
Make dips several hours ahead so the seasoning has time to come together, then taste again before serving. Cold mutes salt, so a dip that tasted right at room temperature often needs a correction once it has chilled.
Snack Boards and Bento Box Lunches
A snack board is an assembly job, not a recipe. One soft thing, one sharp thing, one crunchy thing, something sweet, and enough space that nothing touches.
The back-to-school snack board is the template I use for everything else. The bento boxes apply the same logic to a lunch: a loaded adult bento box, meal-prep bento boxes for work, kids' lunch box ideas and a Halloween version for the one week a year it is worth it.

Flatbreads, Bruschetta and Pinwheels
Flatbread goes soggy when wet toppings go on raw dough. Char or drain anything juicy first, then build.
The Hawaiian flatbread solves it by charring the pineapple, and the grilled peach and burrata flatbread macerates the fruit in salt first. Classic bruschetta and peach bruschetta with whipped ricotta follow the same principle on toast, and the bacon ranch pinwheels are the make-ahead option.
Get the oven as hot as it goes and bake on the lowest rack, because flatbread needs heat from underneath. Slide it onto a rack rather than a plate when it comes out, or steam will undo the crust you just made.

Hot appetizers should be things that survive a plateau. Fried food has a short window; baked and stuffed things hold for the length of a conversation.
Smoked salmon deviled eggs and Caesar salad deviled eggs are the two I bring to other people’s houses. Cabbage dumplings freeze well, which makes them the most useful recipe in this group, and quick pickled red onions are the condiment that makes everything else look finished.
Choose two things you can make ahead and one thing you make hot, and you will spend the party with your guests instead of at the stove. Count on more per person than you planned, especially of whatever is fried.

Snack Mixes and Sweet-Salty Bites
Snack mixes go stale from moisture, not from age. Cool them completely before they go in a container and they stay crisp for days.
Everything bagel snack mix is the savory one, sweet and spicy trail mix bites fix the sogginess problem that ruins most trail mix, and sour candy grape bites are the strange one that disappears fastest.
Store these in glass rather than plastic if you can, and never while warm. These are also the best thing to send home with people, which is reason enough to make a double batch.

A smoothie gets its texture from frozen fruit rather than ice, which chills without watering it down.

The peach lemonades are the summer set, from the classic homemade version to the slush and the guava punch. Peach sangria is the grown-up pitcher, whiskey sour popsicles are the novelty that actually freezes properly, and southern peach tea is the pitcher I keep in the fridge all summer.
Mix the base ahead and add anything fizzy at the last moment. For a pitcher that sits out, freeze some of the drink itself into cubes so it chills without diluting as it melts.

What appetizer can I make ahead of time?
Pinwheels, dumplings and dips all improve with a few hours in the fridge, and snack mixes keep for days. Baked brie is the opposite: assemble it ahead if you like, but bake it at the last minute so it is still molten when it reaches the table.
How much appetizer food do I need per person?
If dinner follows, plan on a few bites each from three or four options. If the appetizers are the meal, you need roughly double that and at least one substantial item, like a flatbread or a baked brie, so people are not filling up on crackers.
Do I take the rind off brie before baking?
No. The rind is what keeps the melted cheese from running out of the pastry. Score the top if you are adding honey or jam, but leave the sides intact.
What is the easiest crowd-pleasing appetizer?
A ranch dip and a snack board, assembled in the same fifteen minutes. Neither needs the oven, which matters when the oven is busy with the main course.
What drinks go with a spread like this?
Something cold in a pitcher. The peach lemonades work for a daytime party, and in cold weather I switch to the spiced cranberry cider.
