Ingredients

  • 1 cup gluten-free flour blend
  • 1 tsp baking powder
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup milk
  • 1 egg
  • 1 tbsp olive oil
  • 1 cup cooked chicken, shredded
  • 1/4 cup chopped chives
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the gluten-free flour blend, baking powder, grated Parmesan cheese, salt, and pepper.
  3. In a separate bowl, combine the milk, egg, and olive oil. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Fold in the shredded chicken and chopped chives until evenly distributed.
  5. Drop tablespoon-sized portions of the mixture onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 15 minutes or until golden brown and firm to the touch.
  7. Allow to cool slightly before serving. Enjoy warm for the best flavors.
