Instructions

- Roll out the puff pastry on a lightly floured surface and cut into 24 small squares.
- Press each square into the muffin tin cups, letting the corners point upward.

- Bake for 12-15 minutes, or until the pastry is puffed and golden brown and the brie is melted.

- Let cool for 2-3 minutes before serving, since the brie will be very hot.
Notes
Use a good-quality store-bought hot honey, or make your own by warming honey with a pinch of red pepper flakes. Assembled but unbaked bites can be frozen for up to 1 month—bake straight from frozen, adding a few extra minutes.
Frequently Asked Questions
Can I make baked brie puff pastry bites ahead of time?
Yes, assemble the pastry cups with brie up to a day in advance and refrigerate, then bake fresh just before serving for the best texture.
What can I use instead of hot honey?
Regular honey with a small pinch of red pepper flakes or a few drops of hot sauce works well as a substitute for store-bought hot honey.
Do I need to remove the rind from the brie?
No, the rind is edible and melts beautifully, so there's no need to trim it before adding the brie to your puff pastry bites.
How do I store leftover baked brie puff pastry bites?
Store leftovers in an airtight container in the fridge for up to 2 days and reheat in a 350°F oven for 5-7 minutes to re-crisp the pastry.
