Baked Brie Puff Pastry Bites with Hot Honey

Flaky puff pastry cups filled with melty brie and topped with a spicy-sweet hot honey drizzle, ready in under 30 minutes.

  • 1 sheet puff pastry, thawed
  • 8 oz brie cheese, cut into small cubes
  • 1/4 cup hot honey (store-bought or homemade)
  • 1 tablespoon fresh thyme leaves, plus more for garnish
  • 1 egg, beaten (for egg wash)
  • 1/4 cup chopped toasted pecans (optional)
  • Flaky sea salt, to taste
  • Cracked black pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and lightly grease a mini muffin tin.
  2. Roll out the puff pastry on a lightly floured surface and cut into 24 small squares.
  3. Press each square into the muffin tin cups, letting the corners point upward.
  4. Brush the pastry edges with the beaten egg wash.
  5. Place a cube of brie into each pastry cup.
  6. Bake for 12-15 minutes, or until the pastry is puffed and golden brown and the brie is melted.
  7. Remove from the oven and immediately drizzle with hot honey while still warm.
  8. Sprinkle with fresh thyme leaves, toasted pecans, flaky sea salt, and cracked black pepper.
  9. Let cool for 2-3 minutes before serving, since the brie will be very hot.

Notes

Use a good-quality store-bought hot honey, or make your own by warming honey with a pinch of red pepper flakes. Assembled but unbaked bites can be frozen for up to 1 month—bake straight from frozen, adding a few extra minutes.
