  • 2 packs buldak (fire noodle) instant ramen, with seasoning packets
  • 4 strips bacon, chopped
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/2 cup mozzarella cheese, shredded

  • 2 egg yolks, plus 2 whole eggs for topping (optional)
  • 1 tablespoon butter
  • 1 green onion, thinly sliced

Instructions

  1. Bring a pot of water to a boil and cook the ramen noodles for 3-4 minutes, slightly less than package instructions for a firmer bite. Drain, reserving 1/4 cup noodle water.
  2. While noodles cook, fry the chopped bacon in a large skillet over medium heat until crispy, about 5 minutes. Remove bacon and set aside, leaving the fat in the pan.
  3. Add butter and minced garlic to the same skillet and sauté for 30 seconds until fragrant.
  4. Lower the heat and pour in the heavy cream, stirring to combine with the bacon fat and garlic.
  5. Stir in the buldak seasoning packets, mozzarella, and parmesan until melted and smooth. Add reserved noodle water a splash at a time to loosen the sauce if needed.
  6. Remove the skillet from heat briefly, then whisk in the egg yolks quickly to avoid scrambling, creating a silky carbonara sauce.
  7. Add the drained noodles to the skillet and toss well to coat in the creamy sauce.
  8. If desired, fry the 2 whole eggs sunny-side up in a separate pan for topping.
  9. Plate the noodles, top with crispy bacon, a fried egg if using, sliced green onion, seaweed strips, and a generous crack of black pepper. Serve immediately.
