- 1 whole chicken (about 4 pounds)
- 2 tablespoons curry powder
- 1 tablespoon garam masala
- 1 cup plain yogurt
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon ginger, grated
- Juice of 1 lemon
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix the curry powder, garam masala, yogurt, olive oil, garlic, ginger, lemon juice, salt, and pepper to create a marinade.
- Rub the marinade all over the chicken, ensuring even coverage. Let it marinate for at least 1 hour in the refrigerator or overnight for best results.
- Place the marinated chicken in a roasting pan and roast in the preheated oven for 75 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
- Allow the chicken to rest for 10 minutes before garnishing with fresh cilantro and serving.
