Ingredients
- 2 lbs beef chuck, cut into 2-inch cubes
- Salt and freshly ground black pepper, to taste
- 2 tbsp olive oil
- 1 onion, chopped
- 4 garlic cloves, minced
- 2 cups red wine, preferably Burgundy
- 2 cups beef broth
- 2 tbsp tomato paste
- 1 tsp thyme
- 4 carrots, sliced
- 1 lb baby potatoes
- 8 oz pearl onions
- 8 oz mushrooms, sliced
- 2 tbsp unsalted butter
- Fresh parsley, chopped (for garnish)
Instructions
- Season the beef cubes generously with salt and pepper.
- In a large Dutch oven, heat olive oil over medium-high heat. Add the beef in batches, browning each side. Remove and set aside.
- In the same pot, add chopped onion and garlic, sautéing until they are soft and fragrant.
- Pour in the red wine, stirring to deglaze the pot and scrape up any browned bits.
- Return the beef to the pot and add beef broth, tomato paste, and thyme. Bring to a simmer.
- Add carrots, potatoes, and pearl onions. Cover and bake in a preheated oven at 350°F (175°C) for 2 hours.
- In the last 30 minutes of cooking, mix in the mushrooms with the butter.
- Check seasoning and adjust if necessary before serving. Garnish with fresh parsley.
