  • 2 lbs beef chuck, cut into 2-inch cubes
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 2 cups red wine, preferably Burgundy
  • 2 cups beef broth
  • 2 tbsp tomato paste
  • 1 tsp thyme
  • 4 carrots, sliced
  • 1 lb baby potatoes
  • 8 oz pearl onions
  • 8 oz mushrooms, sliced
  • 2 tbsp unsalted butter
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the beef cubes generously with salt and pepper.
  2. In a large Dutch oven, heat olive oil over medium-high heat. Add the beef in batches, browning each side. Remove and set aside.
  3. In the same pot, add chopped onion and garlic, sautéing until they are soft and fragrant.
  4. Pour in the red wine, stirring to deglaze the pot and scrape up any browned bits.
  5. Return the beef to the pot and add beef broth, tomato paste, and thyme. Bring to a simmer.
  6. Add carrots, potatoes, and pearl onions. Cover and bake in a preheated oven at 350°F (175°C) for 2 hours.
  7. In the last 30 minutes of cooking, mix in the mushrooms with the butter.
  8. Check seasoning and adjust if necessary before serving. Garnish with fresh parsley.
