Cinnamon Roll Honeybun Cheesecake Recipe

Cinnamon Roll Honeybun Cheesecake Recipe

Pieces of cinnamon roll folded right into the cheesecake batter give this dessert its bakery-case personality, and a drizzle of honey with a dusting of cinnamon over the top finishes the honey bun idea. To me, that honey drizzle is what makes it taste like a honey bun rather than a plain cheesecake.

The crust is quick: crushed graham crackers, a spoonful of sugar and melted butter pressed into the bottom of a springform pan. The filling is a classic baked cheesecake, with cream cheese and sugar beaten until smooth and creamy, then eggs added one at a time, vanilla and sour cream. The cinnamon roll pieces are folded in gently at the end so they stay in chunks.

The oven runs low, at 325°F, for about an hour, until the center is set and the edges are golden. The cheesecake cools completely in the pan before it comes out and goes into the fridge, which firms it enough to slice.

Ingredients

Scale
  • 1 cup crushed graham crackers
  • 1 tablespoon sugar
  • 1/2 cup melted butter
  • 2 cups cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1 cup cinnamon roll pieces
  • 1/4 cup honey
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 325°F (160°C). In a bowl, mix the crushed graham crackers, sugar, and melted butter. Press the mixture into the bottom of a springform pan to form the crust.
  2. In a separate large bowl, beat the cream cheese and sugar until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and sour cream.
  3. Fold in the cinnamon roll pieces and pour the mixture over the prepared crust.
  4. Drizzle honey over the top and sprinkle evenly with ground cinnamon.
  5. Bake for approximately 1 hour, or until the center is set and the edges are golden. Allow to cool completely before removing from the pan and refrigerating.
