Garlic Butter Chicken Bites with Creamy Parmesan Pasta
Chicken bites in a garlicky Parmesan cream sauce, tossed with whatever pasta shape you have on hand: that is the whole idea, and it needs only one skillet besides the pasta pot. I’m partial to short shapes like penne here, since they hold the sauce.
The pasta cooks first and waits, drained, while the skillet does the rest. Garlic goes into melted butter over medium heat until fragrant, then the bite-sized chicken, seasoned with salt and pepper, cooks until golden and cooked through. Medium heat keeps the garlic from scorching.
The heat comes down to low before the cream goes in, and then the Parmesan is stirred in until it melts into a smooth sauce. Low heat is important at this stage, because Parmesan can turn grainy in a sauce that boils, and finely grated cheese melts most evenly.
The pasta goes into the skillet and gets tossed until every piece is coated, with chopped parsley on top if you like.
