Ingredients

  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 cups frozen mixed vegetables
  • 1 can (10.75 oz) condensed cream of mushroom soup
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1 bag (32 oz) frozen tater tots
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, cook the ground beef and chopped onion until the beef is browned and the onion is tender. Drain excess fat.
  3. Add the mixed vegetables, condensed soup, sour cream, and 1 cup of cheddar cheese to the beef mixture. Stir until well combined. Season with salt and pepper.
  4. Transfer the mixture to a 9×13-inch baking dish. Spread evenly.
  5. Arrange the tater tots on top of the beef mixture in a single layer.
  6. Sprinkle the remaining cheddar cheese over the tater tots.
  7. Bake in the preheated oven for 40-45 minutes, or until the tater tots are golden brown and crispy. Serve hot.
