Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 2 cups heavy whipping cream
  • 1 tsp vanilla extract
  • 3 cups fresh strawberries, sliced
  • 1/2 cup granulated sugar
  • 2 tbsp cornstarch
  • 1/4 cup water

Instructions

  1. In a medium bowl, combine graham cracker crumbs and melted butter until evenly moistened. Press the mixture into the bottom of a 9×13-inch dish to form the crust. Refrigerate while preparing the filling.
  2. In a large mixing bowl, beat softened cream cheese and powdered sugar until smooth. In a separate bowl, whip the heavy cream with vanilla extract until stiff peaks form, then fold into the cream cheese mixture gently.
  3. Spread half of the cream cheese mixture over the crust, smoothing out with a spatula.
  4. In a saucepan, combine sliced strawberries, granulated sugar, cornstarch, and water. Cook over medium heat until the mixture thickens and coats the back of a spoon. Let it cool slightly before spreading half over the cream cheese layer.
  5. Add another layer of graham crackers, then repeat with the remaining cream cheese mixture and strawberry topping.
  6. Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight to set.
