Ingredients

  • 2 tablespoons coarse sugar, for topping

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  3. Add the cold cubed butter and use a pastry cutter or your fingers to work it into the flour until the mixture resembles coarse crumbs with pea-sized butter pieces.
  4. Stir in the chocolate chips until evenly distributed.
  5. In a separate small bowl, whisk together the egg, heavy cream, and vanilla extract.
  6. Pour the wet ingredients into the dry ingredients and gently fold together with a spatula until just combined; do not overmix.
  7. Turn the dough out onto a lightly floured surface and pat into an 8-inch circle about 1 inch thick.
  8. Cut the circle into 8 wedges and place them on the prepared baking sheet, spacing them apart.
  9. Brush the tops of the scones with a little extra heavy cream and sprinkle with coarse sugar.
  10. Bake for 16-18 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
  11. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool slightly before serving.
