Chicken Alfredo Bake with Penne
Leftover chicken and a busy evening is exactly the situation this bake was made for. Cooked penne, shredded chicken and Alfredo sauce get stirred together in one bowl, poured into a dish, covered with cheese and baked until it bubbles.
It is not complicated. It suits both kids and adults, and the leftovers make a good lunch.
Small upgrades that help
Cook the pasta just to al dente. It keeps cooking in the oven, and soft penne turns mushy. Freshly grated Parmesan melts better and tastes stronger than the shaker kind.
If you have a handful of broccoli or a few mushrooms, sauté them and fold them in before baking. Let the dish rest five minutes so it sets enough to scoop cleanly. Another baked pasta or two is waiting in my pasta recipes.
