  • Yield: 24 bars 1x
  • Method: Baking
  • Cuisine: American

Ingredients

Scale
  • 2 cups all-purpose flour
  • 2/3 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, cold and cubed
  • 1 cup unsalted butter, for caramel
  • 1 cup packed light brown sugar
  • 1/3 cup honey
  • 2 cups pecan halves, toasted
  • 2 cups semisweet chocolate chips
  • 1 tablespoon vegetable oil
  • Flaky sea salt, for finishing

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a bowl, whisk together flour, granulated sugar, and salt. Cut in the cold cubed butter with a pastry cutter or fork until the mixture resembles coarse crumbs and holds together when pressed.
  3. Press the dough firmly and evenly into the prepared pan. Bake for 18-20 minutes, until the edges turn light golden. Remove from oven and keep at room temperature.
  4. While the crust bakes, melt the 1 cup butter in a saucepan over medium heat. Stir in brown sugar and honey, and bring to a gentle boil, stirring constantly for 3-4 minutes until smooth and slightly thickened.
  5. Scatter the toasted pecans evenly over the warm crust, then pour the hot caramel over the pecans, spreading gently to cover.
  6. Return the pan to the oven and bake for another 15-18 minutes, until the caramel is bubbling all over. Remove and let cool for 10 minutes.
  7. Melt the chocolate chips with vegetable oil in short bursts in the microwave, stirring between each, until smooth and glossy.
  8. Pour the melted chocolate over the caramel layer and spread into an even layer. Sprinkle with flaky sea salt.
  9. Refrigerate for at least 2 hours, or until fully set, before lifting out using the parchment overhang and slicing into bars.

Notes

Toast the pecans in a dry skillet over medium heat for 4-5 minutes for maximum flavor before adding to the bars. Store leftover pecan chocolate turtle bars in an airtight container in the refrigerator for up to a week, or freeze for up to 3 months.

Frequently Asked Questions

What makes turtle bars different from turtle candies?

Pecan chocolate turtle bars take the classic caramel, pecan, and chocolate combo of turtle candies and turn it into an easy sliceable bar with a shortbread crust, so you get all the flavor without shaping individual candies.

Can I make pecan chocolate turtle bars ahead of time?

Yes, these bars actually taste better after chilling overnight, which allows the caramel to fully set and the flavors to meld, so they're a great make-ahead dessert.

Why did my caramel layer turn out grainy?

Grainy caramel usually happens if the sugar isn't fully dissolved before boiling. Stir constantly over medium heat and avoid rushing the process for a smooth caramel layer in your turtle bars.

Can I substitute walnuts for pecans in this recipe?

Pecans give the classic turtle flavor and texture, but walnuts can work as a substitute if that's what you have on hand, though the taste will be slightly more bitter.
