- 1 cup sourdough discard
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 egg
- 1/4 cup melted butter
- 1 teaspoon vanilla extract
- 1/2 cup milk
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin.
- In a large bowl, mix together the sourdough discard, flour, sugar, baking soda, and salt.
- In a separate bowl, whisk together the egg, melted butter, vanilla extract, and milk.
- Incorporate the wet ingredients into the dry ingredients, stirring until just combined. Do not overmix.
- Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
- Bake for 18-20 minutes or until a toothpick inserted into a muffin comes out clean.
- Allow to cool for 5 minutes before serving.
