Greek Chicken Tzatziki Bowls

Ingredients

  • 1 cup Greek yogurt
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pound chicken breast, diced
  • 2 tablespoons olive oil
  • 2 cups cooked quinoa
  • 1 cucumber, diced
  • 1 pint cherry tomatoes, halved
  • 1/4 red onion, sliced
  • 1/4 cup Kalamata olives, sliced
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 400°F.
  2. In a bowl, mix together Greek yogurt, lemon juice, minced garlic, dried oregano, salt, and black pepper.
  3. Add diced chicken breast to the Greek yogurt mixture and marinate for at least 30 minutes.
  4. Heat olive oil in a skillet over medium-high heat.
  5. Add the marinated chicken to the skillet and cook until browned and cooked through.
  6. Meanwhile, prepare the quinoa according to package instructions.
  7. Assemble the bowls by dividing cooked quinoa among serving bowls.
  8. Top with cooked chicken, diced cucumber, halved cherry tomatoes, sliced red onion, and sliced Kalamata olives.
  9. Garnish with fresh parsley.
