Ingredients
- 1 1/2 cups chocolate cookie crumbs
- 1/4 cup unsalted butter, melted
- 3 (8-ounce) packages cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1/3 cup sour cream
- 1/3 cup strawberry puree
- 1/4 cup melted dark chocolate
- 2 tablespoons all-purpose flour
- 1/4 cup heavy cream
Instructions
- Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan.
- Mix the chocolate cookie crumbs with the melted butter and press into the bottom of the prepared pan to form the crust. Set aside.
- In a large bowl, beat the cream cheese until smooth. Gradually add the sugar and vanilla extract; mix until well combined.
- Add eggs one at a time, beating well after each addition. Stir in sour cream and flour until smooth.
- Pour half of the cheesecake batter over the crust. Drizzle strawberry puree and melted chocolate over the batter. Pour the remaining batter over the top.
- Use a knife to gently swirl the strawberry puree and chocolate into the batter.
- Place the cheesecake in a water bath and bake for about 1 hour, or until the center is set and the top is lightly browned.
- Turn off the oven and leave the cheesecake inside for 1 hour with the door slightly ajar.
- Remove from the oven and let cool to room temperature, then refrigerate for at least 2 hours before serving.
