Ingredients

Scale
  • 1 pound ground beef
  • 6 slices bacon, cooked and chopped
  • ½ yellow onion, diced
  • 1 tablespoon minced garlic
  • 14.5-ounce can petite diced tomatoes, drained
  • ½ cup heavy whipping cream
  • 3 cups cheddar cheese, divided
  • 12 ounces cheese tortellini, cooked and drained

Instructions

  1. In a large skillet, cook the ground beef over medium heat until no longer pink, breaking it apart as it cooks.
  2. Remove the cooked beef and set aside, draining excess grease from the skillet.
  3. In the same skillet, sauté the diced onion for 2-3 minutes, then add the minced garlic and cook for another 30-45 seconds until fragrant.
  4. Return the cooked beef to the skillet. Add the heavy whipping cream, 2 cups of cheddar cheese, chopped bacon, and drained diced tomatoes. Stir to combine.
  5. Reduce heat to low and simmer, stirring until the cheese is melted and the mixture is well blended.
  6. Add the cooked tortellini and stir to combine.
  7. Sprinkle the remaining 1 cup of cheese on top, cover, and simmer on low until the cheese is melted.
  8. Remove from heat and let cool for 10 minutes before serving.

Notes

For extra flavor, use freshly grated cheddar cheese. Substitute spinach or cherry tomatoes for added vegetables. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.

Frequently Asked Questions

Can I use a different type of pasta for this recipe?

Yes, you can substitute the tortellini with other short pasta shapes like rotini or penne. The key is to use a pasta that can hold the rich, cheesy sauce and ground beef mixture well. The dish will still capture the delicious essence of Bacon Cheeseburger Tortellini.

How can I make this Bacon Cheeseburger Tortellini less rich?

To lighten the dish, use lean ground beef and drain any excess fat thoroughly. You can also opt for a lower-fat cheese blend and reduce the amount of bacon. Adding a splash of broth to the sauce can help balance the richness while keeping the flavor.

What are the best sides to serve with this pasta?

This hearty Bacon Cheeseburger Tortellini pairs well with a simple green salad or steamed green beans. For a classic burger experience, serve it with crispy pickle spears or roasted potato wedges on the side.
