Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup melted butter
- 16 oz cream cheese, softened
- 1/2 cup sour cream
- 2/3 cup granulated sugar
- 2 large eggs
- 1 tablespoon lemon zest
- 2 tablespoons lemon juice
- 1 cup fresh blueberries
- 1 tablespoon all-purpose flour
Instructions
- Preheat your oven to 325°F (163°C). Line a 9×9-inch baking pan with parchment paper.
- In a medium bowl, mix graham cracker crumbs, sugar, and melted butter. Press firmly into the prepared pan.
- In a large bowl, beat cream cheese, sour cream, and sugar until smooth. Add eggs, one at a time, mixing well after each addition.
- Stir in lemon zest, lemon juice, and flour until just combined.
- Pour the cheesecake mixture over the crust. Sprinkle blueberries evenly over the top.
- Bake for 30-35 minutes or until the center is slightly set.
- Allow to cool completely, then refrigerate for at least 2 hours before slicing into bars.
