Chocolate Coffee Cupcakes with Coffee Whipped Cream

Chocolate Coffee Cupcakes with Coffee Whipped Cream

These chocolate cupcakes are made with a cup of brewed coffee in the batter, which deepens the chocolate without making them taste like a latte. The frosting is a cloud of whipped cream flavored with a little instant coffee.

The batter has no eggs and no butter. Oil, vinegar and baking soda do the work, so it comes together in one bowl with pantry staples.

Cool before you frost

Whipped cream melts on warm cake, so let the cupcakes cool completely on a rack. I dissolve the instant coffee in the cream before whipping so there are no gritty specks.

Because the frosting is fresh cream, keep frosted cupcakes in the fridge. If you are baking for a party, browse my easy dessert recipes.
