Ingredients

  • 1 cup chopped pecans
  • 1 cup shredded coconut
  • 1 cup brown sugar
  • 1/2 cup unsalted butter
  • 1/2 cup milk
  • 1 tsp vanilla extract

Instructions

  1. In a medium saucepan over medium heat, combine brown sugar, butter, and milk. Stir continuously until butter melts and mixture comes to a boil.
  2. Allow the mixture to boil for 3 minutes without stirring. Remove from heat and stir in vanilla extract.
  3. Add pecans and coconut to the saucepan, stirring until fully coated with the sugar mixture.
  4. Using a spoon, drop spoonfuls of the mixture onto parchment paper. Shape them gently into cookies and allow to cool until set, approximately 30 minutes.
