  • 2 cups cooked chicken, shredded
  • 1 cup frozen peas and carrots
  • 1/2 cup diced onion
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 tbsp all-purpose flour
  • 2 tbsp butter
  • Salt and pepper to taste
  • 1 package cheddar bay biscuit mix
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup melted butter
  • 1 tsp garlic powder

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, melt butter over medium heat. Add onions and cook until translucent.
  3. Stir in flour and cook for 1-2 minutes until it starts to thicken.
  4. Gradually whisk in chicken broth and cream. Cook until the mixture thickens.
  5. Add the shredded chicken, peas, and carrots. Season with salt and pepper. Simmer for another 5 minutes.
  6. Transfer the mixture to a baking dish.
  7. Prepare the cheddar bay biscuit mix according to package instructions, adding cheese and garlic powder to the dough.
  8. Spoon the biscuit dough evenly over the chicken mixture.
  9. Bake for 25-30 minutes, or until the biscuits are golden brown.
  10. Brush melted butter over the top before serving.
