  • 1 cup ricotta cheese
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup mini chocolate chips
  • 1 package pre-made sugar cookie dough
  • 1 teaspoon cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a mini muffin tin.
  2. Scoop dough into each muffin cup, pressing down to form cups.
  3. Bake for 12-15 minutes or until golden brown. Allow to cool.
  4. In a bowl, mix ricotta, powdered sugar, vanilla, and cinnamon.
  5. Fold in chocolate chips into the ricotta mixture.
  6. Fill cooled cookie cups with the ricotta filling.
  7. Chill in the refrigerator for at least 30 minutes before serving.
