Ingredients
- 1 pound shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 tablespoon Cajun seasoning
- 1 bell pepper, sliced
- 1 onion, sliced
- 2 cups cherry tomatoes, halved
- 2 cloves garlic, minced
- Salt and pepper to taste
- Lemon wedges, for serving
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine shrimp, olive oil, Cajun seasoning, salt, and pepper. Toss to coat.
- Add sliced bell pepper, onion, cherry tomatoes, and garlic to the bowl. Mix well.
- Spread the mixture onto a baking sheet in an even layer.
- Bake in the preheated oven for 25 minutes, or until the shrimp is cooked through and vegetables are tender.
- Remove from oven and serve with lemon wedges.
