Ingredients

  • 2 cups cooked chicken, cubed
  • 2 cups fresh spinach, chopped
  • 1 cup cooked rice
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add spinach and sauté until wilted.
  3. In a large bowl, combine cooked chicken, wilted spinach, cooked rice, cream of mushroom soup, and milk. Mix well.
  4. Season with salt and pepper to taste.
  5. Transfer the mixture into a greased 9×13 inch baking dish and spread evenly.
  6. Sprinkle the shredded cheddar cheese on top.
  7. Bake in the preheated oven for 30 minutes or until the cheese is bubbly and golden brown.
  8. Allow to cool slightly before serving.
