Ingredients
- 1 cup dried mango pieces
- 1 cup unsweetened shredded coconut
- 1/2 cup almond meal
- 2 tablespoons coconut oil
- 1 tablespoon honey (optional)
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- In a food processor, combine the dried mango pieces and process until chopped finely.
- Add shredded coconut, almond meal, coconut oil, honey, vanilla extract, and salt to the processor.
- Blend the mixture until it comes together into a dough-like consistency.
- Using your hands, shape the mixture into small balls, about 1 inch in diameter.
- Place the balls on a baking sheet lined with parchment paper.
- Refrigerate the Mango Coconut Balls for at least 30 minutes to firm up.
- Enjoy immediately or store for later.
