  • 1 pound mushrooms, sliced

  • salt and pepper to taste

Instructions

  1. Melt 2 tablespoons butter in a large pot over medium heat. Add sliced mushrooms and sauté until tender.
  2. Add 1 tablespoon butter, then add diced onion, carrots, celery, garlic, and thyme. Cook until vegetables are softened.
  3. Pour in chicken broth and bring to a boil.
  4. Add wild rice and reduce heat to a simmer. Cover and cook until rice is tender, about 40 minutes.
  5. Stir in cooked chicken and cream or milk. Heat through but do not boil.
  6. Add grated parmesan cheese and stir until melted and combined.
  7. Season with salt and pepper to taste. Serve warm.
