Ingredients

  • 4 ripe peaches, sliced
  • 3 large lemons, juiced (about 1 cup)
  • 1 cup sugar (or honey/agave to taste)
  • 2 cups water (plus more for blending)
  • Fresh mint leaves (optional, for garnish)

Instructions

  1. Wash and slice the peaches into wedges.
  2. Juice the lemons until you have around one cup of lemon juice.
  3. In a bowl, combine sugar with two cups of water and stir until dissolved.
  4. In a blender, blend peach slices, lemon juice, and two cups of water until smooth.
  5. For a smoother texture, strain through a fine mesh sieve into a pitcher.
  6. Chill in the refrigerator for at least 30 minutes before serving over ice.
  7. Garnish with mint leaves or extra peach slices if desired.
