  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup crushed pineapple with juice
  • 1/2 cup sour cream

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large mixing bowl, combine the melted butter and sugar until smooth.
  4. Add the eggs, one at a time, mixing well after each addition. Stir in vanilla extract.
  5. Mix in the crushed pineapple and its juice, followed by the sour cream.
  6. Gradually add the dry ingredients to the wet, stirring just until combined. Do not over-mix.
  7. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  8. Bake for 50 minutes, or until a toothpick inserted into the center comes out clean.
  9. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
