Ingredients

Scale
  • 1 pound lean ground beef
  • 1 cup yellow onion, diced
  • 1 medium green bell pepper, diced
  • 3 ounces pepperoni, chopped
  • 1 tablespoon garlic, chopped
  • 1/3 cup pizza sauce
  • 1 tablespoon Italian seasoning
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/3 cup bacon, crumbled
  • 8 large flour tortillas
  • 2 cups pizza sauce (for topping)

  • 1/4 cup bacon, crumbled (for topping)

Instructions

  1. Preheat oven to 375°F and grease a baking sheet.
  2. Cook ground beef in a skillet over medium-high heat until no pink remains.

  4. Stir in chopped garlic and cook 2 minutes until fragrant.
  5. Remove skillet from heat and stir in 1/3 cup pizza sauce, Italian seasoning, ricotta cheese, 1 cup shredded mozzarella, and 1/3 cup crumbled bacon until well combined.
  6. Spoon the mixture evenly onto each flour tortilla, then roll up tightly.
  7. Place rolled tortillas seam-side down on the greased baking sheet.
  8. Pour 2 cups pizza sauce evenly over the enchiladas.
  9. Top with 2 1/2 cups shredded mozzarella, pepperoni slices, and 1/4 cup crumbled bacon.
  10. Bake for 20–25 minutes until cheese is melted and bubbly.
  11. Remove from oven and let cool for a few minutes before serving.

Notes

Use lean ground beef to reduce grease; substitute turkey pepperoni for a lighter option; cover enchiladas with foil if baking longer than 25 minutes to prevent over-browning.

Frequently Asked Questions

Can I use a different type of meat for these Pizza Enchiladas with Ground Beef?

Yes, you can easily substitute the ground beef. Ground turkey, chicken, or a plant-based crumble all work well. The key is to season your chosen protein well to maintain the hearty, savory flavor central to Pizza Enchiladas with Ground Beef.

What is the best way to prevent the enchiladas from getting soggy?

Briefly fry your tortillas in hot oil before filling and rolling. This creates a slight barrier that helps them hold up to the sauce. Also, avoid over-saucing the bottom of the baking dish before adding your assembled Pizza Enchiladas with Ground Beef.

Can I prepare Pizza Enchiladas with Ground Beef ahead of time?

Absolutely. Assemble the enchiladas completely, cover tightly, and refrigerate for up to one day before baking. You may need to add a few extra minutes to the baking time if you are starting with a cold dish from the refrigerator.
