  • 1 lb breakfast sausage
  • 2 tablespoons butter
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon ground sage
  • 1/4 teaspoon black pepper
  • 2 1/2 cups whole milk
  • 8 southern homestyle biscuits, unbaked
  • 6 large eggs
  • 1 cup shredded cheese
  • Salt to taste

Instructions

  1. Preheat oven to 350°F. Grease a 13×9-inch baking dish with butter or nonstick cooking spray.
  2. Cook and crumble breakfast sausage in a large skillet over medium-high heat until browned. Transfer to a paper towel-lined plate, leaving drippings in the pan.
  3. Melt butter in the skillet drippings. Sprinkle flour over the sausage and cook, stirring constantly, for 2 minutes.
  4. Gradually whisk in milk, sage, and black pepper. Simmer until gravy thickens.
  5. Cut each biscuit into 6 pieces and spread in an even layer in the prepared baking dish.
  6. Sprinkle the browned sausage and half the shredded cheese evenly over the biscuit pieces.
  7. In a large bowl, whisk together eggs and remaining milk with salt and pepper. Pour evenly over the biscuit layer.
  8. Pour the gravy evenly over the top and sprinkle with remaining cheese.
  9. Bake uncovered for 35-45 minutes, or until eggs and biscuits are cooked through and the casserole is lightly browned and puffy.
  10. Let stand 3-5 minutes before serving.
