- 1½ pounds radishes, cut into bite size pieces
- 2 tablespoons olive oil
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon salt
- ⅛ teaspoon pepper
- ⅔ cups shredded cheddar cheese, divided
- ⅓ cup shredded mozzarella cheese
- 4 ounces bacon, fried and crumbled
- 1 green onion stalk, chopped
- Sprinkle of paprika
- Optional topping: sour cream
Instructions

- Pre-heat oven to 400 degrees.

- Place radishes onto a baking sheet large enough for radishes to not overlap.

- Drizzle olive oil over radishes
- Sprinkle garlic powder, onion powder, salt, and pepper over radishes
- Stir to coat radishes evenly in the olive oil and with the seasonings.

- Roast for 35-40 minutes, or until radishes are fork tender
- Stir 3-4 times while roasting.

- Remove baking sheet from oven
- Turn oven to broil.

- Sprinkle radishes with ⅓ cup shredded cheddar and ⅓ cup shredded mozzarella cheese.

- Sprinkle bacon evenly over the cheese
- Then sprinkle the green onions over the bacon.

- Top with remaining ⅓ cup shredded cheddar cheese
- Sprinkle with paprika.

- Broil for 2-3 minutes, or until cheese is melted.

- Serve immediately
- Top each serving with a dollop of sour cream if desired.
