Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup raspberry jam
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter and granulated sugar until light and fluffy.
  3. Add vanilla extract and mix until combined.
  4. Gradually blend in flour and salt until a dough forms.
  5. Roll dough into 1-inch balls and place them 2 inches apart on the prepared baking sheet.
  6. Use your thumb to make an indentation in the center of each cookie ball.
  7. Fill each indentation with about 1/2 teaspoon of raspberry jam.
  8. Bake for 13-15 minutes, or until the edges are slightly golden.
  9. Allow cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
  10. Dust with powdered sugar before serving, if desired.
