- 1 pre-baked pie crust
- 1 cup granulated sugar
- 3 tablespoons unsweetened cocoa powder
- 1/4 cup all-purpose flour
- 1 1/2 cups milk
- 3 large egg yolks
- 2 tablespoons butter
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium saucepan, combine sugar, cocoa powder, and flour. Stir in the milk until smooth.
- Cook over medium heat, stirring constantly until the mixture thickens and starts to bubble.
- Reduce the heat to low and cook for an additional 2 minutes, continuing to stir.
- Remove from heat and gradually whisk a small amount of the hot mixture into the egg yolks. Return egg mixture to the saucepan and bring to a gentle boil.
- Cook and stir for another 2 minutes. Remove from heat and add butter and vanilla, stirring until the butter melts.
- Pour the filling into the pre-baked pie crust.
- Bake for 10 minutes. Cool on a wire rack, then refrigerate for at least 4 hours before serving.
