Ingredients

  • 2 cups all-purpose flour
  • 1 and 1/2 cups granulated sugar
  • 3/4 cup cocoa powder
  • 1 and 1/2 tsp baking powder
  • 1 and 1/2 tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 1 can (21 oz) cherry pie filling
  • 1 cup heavy cream, whipped
  • Chocolate shavings, for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, milk, oil, and vanilla to the dry ingredients and beat on medium speed for 2 minutes.
  4. Stir in the boiling water until the batter is smooth. The batter will be thin.
  5. Pour the batter evenly into prepared pans and bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  6. Let the cakes cool in the pans for 10 minutes, then remove to wire racks to cool completely.
  7. Place one cake layer on a serving plate, spread half of the cherry pie filling, followed by a layer of whipped cream.
  8. Top with the second cake layer and repeat the cherry and cream layers. Finish with chocolate shavings.
  9. Refrigerate for at least 1 hour before serving for the best texture and flavor.
