Million Dollar Roast Beef Tenderloin

A whole beef tenderloin rubbed with Dijon mustard, garlic, rosemary and thyme, then roasted hot until the outside is browned and the center stays pink. Rest it before slicing so the juices stay in the meat.

Ingredients

Scale
  • 1 whole beef tenderloin (about 4 pounds), trimmed and tied
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon Dijon mustard

Instructions

  1. Preheat your oven to 425°F (220°C). Place the trimmed beef tenderloin on a baking sheet.
  2. In a small bowl, mix olive oil, minced garlic, salt, pepper, rosemary, thyme, and Dijon mustard. Rub the mixture all over the tenderloin evenly.
  3. Roast the beef in the preheated oven for about 40 minutes or until it reaches your desired level of doneness (135°F for medium-rare).
  4. Remove the beef from the oven and let it rest for at least 10 minutes before slicing. This allows the juices to redistribute, ensuring a juicy and flavorful roast.
