Blueberry Lemon Scones

Buttery, flaky scones packed with juicy blueberries and bright lemon zest, finished with a tangy lemon glaze.

  • 2 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, frozen and grated
  • 1 cup fresh blueberries
  • 2 tablespoons lemon zest (about 2 lemons)
  • 1/2 cup heavy cream, plus extra for brushing
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons fresh lemon juice
  • 1 cup powdered sugar (for glaze)
  • 23 tablespoons fresh lemon juice (for glaze)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, granulated sugar, baking powder, and salt.
  3. Grate the frozen butter into the flour mixture using a box grater, then toss to coat and work in with your fingers until crumbly.
  4. Gently fold in the blueberries and lemon zest, being careful not to crush the berries.
  5. In a separate bowl, whisk together heavy cream, egg, vanilla extract, and lemon juice.
  6. Pour the wet ingredients into the dry ingredients and stir gently just until a shaggy dough forms.
  7. Turn the dough onto a floured surface and pat into an 8-inch circle about 1 inch thick.
  8. Cut into 8 wedges and place on the prepared baking sheet, spacing them apart.
  9. Brush the tops with a little extra heavy cream and sprinkle with sugar if desired.
  10. Bake for 18-20 minutes, until golden brown and a toothpick inserted comes out clean.
  11. Let scones cool for 10 minutes on a wire rack.
  12. Whisk powdered sugar with lemon juice until smooth, then drizzle over the cooled scones before serving.

Notes

Keep all ingredients cold, especially the butter, for the flakiest texture. Frozen blueberries can be used straight from the freezer without thawing to prevent bleeding into the dough. Store leftover scones in an airtight container for up to 2 days, or freeze unglazed scones for up to 2 months.
