Baked Brie in Puff Pastry with Honey & Walnuts

Golden puff pastry wrapped around melty brie cheese, topped with honey and crunchy walnuts.

  • 1 sheet puff pastry, thawed
  • 1 wheel brie cheese (8 oz)
  • 1/3 cup honey, plus more for drizzling
  • 1/2 cup walnuts, roughly chopped
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon fresh rosemary, chopped (optional)
  • Flaky salt, to taste
  • Crackers, baguette slices, or apple wedges, for serving

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out the puff pastry sheet on a lightly floured surface, smoothing out any creases.
  3. Place the brie wheel in the center of the pastry.
  4. Drizzle honey over the brie and sprinkle with chopped walnuts.
  5. Fold the edges of the pastry up and over the brie, pinching and pleating to fully enclose it, then pinch off any excess dough at the top.
  6. Carefully flip the wrapped brie so the seam side is down, and place it on the prepared baking sheet.
  7. Brush the entire surface of the pastry with the beaten egg wash.
  8. Bake for 20 to 25 minutes, or until the pastry is deep golden brown and puffed.
  9. Let the baked brie rest for 5 to 10 minutes before transferring to a serving plate.
  10. Drizzle with extra honey, scatter more walnuts and rosemary on top, and finish with a pinch of flaky salt. Serve warm with crackers, bread, or apple slices.

Notes

Let the brie sit at room temperature for about 15 minutes before wrapping so it softens slightly. Avoid overbaking, as the pastry can brown before the center fully melts if the oven runs hot.
