The Whipped Cottage Cheese Bowl That Fixes Everyone’s Texture Problem

A blended, silky cottage cheese bowl loaded with crispy chickpeas, cucumber, and hot honey for a savory-sweet high-protein meal.

  • 1 cup (225g) full-fat or 2% cottage cheese
  • 1 tbsp olive oil, plus more for drizzling
  • 1 tsp lemon zest
  • 1 tsp fresh lemon juice
  • Salt, to taste
  • 1/2 cup canned chickpeas, drained and patted dry
  • 1/2 tsp smoked paprika
  • 1/2 cucumber, diced
  • 1/2 cup cherry tomatoes, halved
  • 1 tbsp hot honey or chili crisp
  • 1 tsp everything bagel seasoning
  • Fresh dill or mint, for topping

Instructions

  1. Heat a drizzle of olive oil in a small skillet over medium-high heat. Add the chickpeas and smoked paprika and cook, shaking the pan often, until crisp and golden, about 5 minutes. Set aside.
  2. Add the cottage cheese, 1 tbsp olive oil, lemon zest, lemon juice, and a pinch of salt to a blender or food processor.
  3. Blend on high for 60 to 90 seconds, scraping down the sides once, until completely smooth, airy, and free of visible curds. Add a splash of water or milk if it’s too thick to move.
  4. Taste and adjust salt and lemon. Spread the whipped base into a shallow bowl and swoosh it up the sides with the back of a spoon.
  5. Top with the crispy chickpeas, cucumber, and cherry tomatoes.
  6. Drizzle with hot honey or chili crisp, sprinkle with everything bagel seasoning and fresh herbs, and serve immediately.

Notes

Under-blending is the number one reason people give up on this — you need a full 60-90 seconds, not a quick pulse, or you just end up with grainy soup instead of a smooth whip. Low-fat and fat-free cottage cheese blend thinner and can split, so add any extra liquid a teaspoon at a time. Leftover whipped base keeps in an airtight container in the fridge for up to 4 days — it firms up slightly when chilled, so let it sit at room temperature for 5 minutes before serving again.
