Sweet & Spicy Swicy Chicken Wings Everyone’s Obsessed With

Extra-crispy baked wings double-glazed in a sticky hot honey-gochujang sauce for the ultimate sweet-and-spicy swicy bite.

  • 3 lbs chicken wings, split into flats and drumettes
  • 2 tsp baking powder (not baking soda)
  • 1 tsp fine salt
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/3 cup hot honey
  • 3 tbsp gochujang
  • 1 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 2 tbsp unsalted butter
  • 1 tsp toasted sesame seeds, to serve
  • 2 scallions, thinly sliced, to serve

Instructions

  1. Pat the wings completely dry with paper towels. Toss with baking powder, salt, garlic powder, and smoked paprika until evenly coated. Spread in a single layer on a wire rack set over a baking sheet and refrigerate uncovered for at least 1 hour, up to overnight.
  2. Preheat the oven to 425°F (220°C). Roast the wings on the rack for 40-45 minutes, flipping once halfway, until deeply golden and crisp.
  3. While the wings roast, whisk together the hot honey, gochujang, rice vinegar, and soy sauce in a small saucepan. Simmer over low heat for 2-3 minutes until slightly thickened, then divide the sauce in half.
  4. With about 10 minutes left on the wings, brush them lightly with half the glaze and return to the oven to caramelize.
  5. Warm the remaining glaze with the butter until melted and glossy. Toss the hot wings in this glaze in a large bowl until fully coated.
  6. Pile onto a platter, scatter with sesame seeds and scallions, and serve immediately.

Notes

Don’t skip the dry brine time — even 1 hour makes a real difference in crispiness, and this recipe uses no oil or deep frying. If your gochujang is very thick, thin the glaze with a teaspoon of water so it brushes on evenly. Leftover wings re-crisp well in a 400°F oven or air fryer for 5-6 minutes; microwaving will make them soggy.
