Shrimp Scampi

A classic Italian-American dish featuring succulent shrimp in a rich, buttery sauce flavored with herbs and lemon.

  • 1 pound large shrimp, peeled and deveined
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup vermouth
  • 4 tablespoons unsalted butter
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh tarragon
  • 1 tablespoon chopped fresh chives
  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon grated lemon zest

Instructions

  1. Toss shrimp with baking soda and salt. Let stand for 10 minutes.
  2. Heat olive oil in a skillet over high heat. Cook shrimp in batches until just cooked through and lightly browned. Transfer to a plate.
  3. Add more oil if needed, then cook garlic and red pepper flakes until garlic is lightly golden.
  4. Add vermouth to the pan, stirring up brown bits. Simmer until reduced by half.
  5. Stir in butter until melted, whisking constantly. Add parsley, tarragon, chives, lemon juice, and zest.
  6. Return shrimp to the pan and toss to coat with sauce.

Notes

For the best results, cook the shrimp in batches to prevent overcrowding the pan. Use high-quality ingredients like fresh herbs and real butter for the best flavor.
