Rainbow Veggie Bento Box – Colorful Bento Box Ideas

A colorful, veggie-packed bento box arranged by color for a fun, healthy, make-ahead lunch.

  • 1 cup cherry tomatoes, halved
  • 1 cup radishes, thinly sliced
  • 1 cup carrots, cut into sticks or ribbons
  • 1 cup mini bell peppers (orange and yellow), sliced
  • 1 cup corn kernels (fresh or thawed from frozen)
  • 1 cup cucumber, sliced into rounds
  • 1 cup shelled edamame, steamed and cooled
  • 1 cup purple cabbage, thinly shredded
  • 1/2 cup purple grapes, halved
  • 1 cup cooked rice or quinoa
  • 1 cup cooked chicken, tofu, or chickpeas, cubed
  • 1/4 cup hummus or yogurt dip
  • Salt and pepper, to taste
  • 1 tablespoon sesame seeds, for garnish (optional)

Instructions

  1. Wash all vegetables and fruit thoroughly, then pat completely dry with a clean towel to prevent sogginess in the box.
  2. Cut the vegetables into uniform, bite-sized shapes: halve the tomatoes, slice the radishes and cucumber into rounds, cut the carrots into sticks, and slice the mini peppers.
  3. Steam the edamame for 3-4 minutes until bright green and tender, then cool completely under cold water.
  4. Shred the purple cabbage thinly and season lightly with a pinch of salt to soften it slightly.
  5. Cook the rice or quinoa and the protein of choice (chicken, tofu, or chickpeas), season with salt and pepper, and let cool to room temperature.
  6. Arrange the rice or quinoa and protein in the largest compartment of the bento box as the base.
  7. Fill the remaining compartments with the vegetables and fruit, grouping them by color to create the rainbow effect: red, orange, yellow, green, and purple.
  8. Add the hummus or yogurt dip in a small separate container or compartment.
  9. Sprinkle sesame seeds over the top for extra texture and flavor, if using.
  10. Seal the bento box and refrigerate until ready to eat, or pack immediately for lunch on the go.

Notes

Store chopped vegetables in separate airtight containers for up to 4 days for easy daily assembly. Keep dips separate until ready to eat to prevent sogginess. Swap in any seasonal vegetables that match the rainbow color categories.
