Braised Pork Shoulder with Apples and Onions

A deliciously tender pork shoulder roast braised with apples and onions, perfect for a cozy dinner.

  • 1 (2-3 pound) boneless pork shoulder
  • 2 tablespoons olive oil
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • 2 apples, peeled and sliced
  • 1 cup apple cider
  • 1 cup chicken broth
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 300°F.
  2. Season the pork shoulder with salt and pepper.
  3. Heat the olive oil in a large Dutch oven over medium-high heat. Sear the pork until browned on all sides, about 5 minutes per side.
  4. Remove the pork from the pot and set it aside. Reduce heat to medium and cook the sliced onions until they are softened and lightly browned, about 8 minutes.
  5. Add the garlic and cook for 1 minute.
  6. Add the sliced apples, apple cider, chicken broth, mustard, and thyme to the pot. Stir to combine.
  7. Return the pork to the pot, cover it with a lid, and transfer it to the preheated oven.
  8. Braise the pork for about 2 1/2 to 3 hours, or until it is tender and easily shreds with a fork.
  9. Let the pork rest for 10 minutes before slicing and serving.
