For the Crust:

  • 1 box yellow cake mix
  • 1 cup crushed pineapple, drained
  • 1 cup pineapple juice
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup shredded coconut (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, mix cake mix, pineapple juice, vegetable oil, and eggs until smooth. Fold in crushed pineapple.
  3. Divide batter evenly between the prepared pans. Bake for 25-30 minutes or until a toothpick comes out clean. Let cool completely.
  4. In a chilled bowl, whip heavy cream, powdered sugar, and vanilla until stiff peaks form.
  5. Place one cake layer on a serving plate. Spread half the whipped cream over the top. Add the second layer and cover with remaining cream. Sprinkle with shredded coconut if desired.
  6. Refrigerate for at least 1 hour before serving.
