For the Crust:
1 box yellow cake mix
1 cup crushed pineapple, drained
1 cup pineapple juice
1/2 cup vegetable oil
3 large eggs
2 cups heavy whipping cream
1/4 cup powdered sugar
1 tsp vanilla extract
1/2 cup shredded coconut (optional)
Instructions
1. Prepare the Crust:
Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
In a large bowl, mix cake mix, pineapple juice, vegetable oil, and eggs until smooth. Fold in crushed pineapple.
Divide batter evenly between the prepared pans. Bake for 25-30 minutes or until a toothpick comes out clean. Let cool completely.
In a chilled bowl, whip heavy cream, powdered sugar, and vanilla until stiff peaks form.
Place one cake layer on a serving plate. Spread half the whipped cream over the top. Add the second layer and cover with remaining cream. Sprinkle with shredded coconut if desired.
