  • 4 cups water
  • 2 cups milk
  • 1 teaspoon salt
  • 1/2 cup butter
  • 8 ounces of pimento cheese
  • 1 cup grated sharp cheddar cheese
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped scallions (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large pot, bring water and milk to a boil. Add salt.
  3. Gradually whisk in the grits, reduce heat, and simmer until thick, about 20-25 minutes, stirring frequently.
  4. Remove from heat and stir in butter, pimento cheese, and half of the cheddar cheese until fully combined.
  5. Pour the grits mixture into a greased 9×13-inch baking dish.
  6. Sprinkle remaining cheddar cheese and black pepper on top.
  7. Bake for 20-25 minutes, or until the casserole is bubbly and the cheese on top is lightly browned.
  8. Let cool slightly before serving. Garnish with chopped scallions if desired.
