Irresistible Orange Almond Cake
- 2 cups (200g) almond flour
- 3/4 cup (150g) granulated sugar
- 4 large eggs, room temperature
- 1 teaspoon baking powder
- Pinch of salt
- 1/4 cup (60ml) fresh orange juice
- 1 tablespoon orange zest
- 1 teaspoon vanilla extract
- 1 cup (120g) powdered sugar
- 2 tablespoons fresh orange juice (for glaze)
- Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan or line it with parchment paper.
- In a medium bowl, whisk together almond flour, baking powder, and a pinch of salt.
- In a separate bowl, beat eggs and granulated sugar using a hand mixer until pale and fluffy, about 3-4 minutes.
- Stir in fresh orange juice, orange zest, and vanilla extract. Mix until combined.
- Gently fold the dry mixture into the wet ingredients using a spatula. Mix until just combined—don’t overmix.
- Pour the batter into the prepared pan and spread evenly. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Let cool completely.
- In a small bowl, whisk together powdered sugar and fresh orange juice until smooth and glossy.
- Once the cake is cool, drizzle the glaze over the top, letting it drip down the sides.
