- Yield: 4 1x
- 2 tablespoons olive oil
- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup grated parmesan cheese
- 12 oz fettuccine or pasta of choice
- 1 tablespoon chopped fresh parsley
- Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper and sear until golden, about 6-7 minutes per side. Remove from skillet and set aside.
- In the same skillet, add minced garlic and cook for 1 minute until fragrant.
- Stir in heavy cream and chicken broth, bringing to a gentle simmer. Add parmesan cheese, whisking until melted and sauce is smooth.
- Meanwhile, cook pasta per package instructions; reserve 1 cup pasta water before draining.
- Return chicken to skillet, spooning sauce over the top. Simmer for 5-7 minutes until chicken is cooked through.
- Toss pasta with sauce; adjust thickness with reserved pasta water if necessary.
- Serve, garnished with fresh parsley.
Notes
- Use fresh garlic for the best flavor; pre-minced garlic may not provide the same aromatic intensity.
- Add spinach or baby kale at the end of cooking for an extra dose of greens.
