For the Crust:
4 boneless, skinless chicken breasts
1 lb fresh green beans, trimmed
4 tbsp unsalted butter
4 cloves garlic, minced
1 lemon, juiced and zested
1 tsp dried thyme
1/2 tsp salt
1/4 tsp black pepper
1/4 cup chicken broth
Instructions
1. Prepare the Crust:
Season chicken breasts with salt, pepper, and thyme.
Melt 2 tbsp butter in a large skillet over medium-high heat. Add chicken and cook for 5-6 minutes per side until golden and cooked through. Remove and set aside.
In the same skillet, add remaining butter, garlic, and green beans. Sauté for 4-5 minutes until beans are crisp-tender.
Pour in chicken broth and lemon juice, scraping up any browned bits. Simmer for 2 minutes.
Return chicken to the skillet, spooning sauce over it. Sprinkle with lemon zest and serve immediately.
